Cioppino, a San Francisco wharf-side specialty, is a tomato-based fish stew. It was probably devised by Genoese immigrant fishermen to remind them of home. Onions, garlic, carrots, leeks and celery are cooked in olive oil as the base. Tomatoes, wine, fish stock and an array of fish and shellfish (particularly crab, mussels, shrimp, scallops and snapper) are among the other ingredients.
