Cacciatore, Italian for "hunter," refers to dishes prepared "hunter's style." The most popular dish is Chicken Cacciatore. Recipes for this entrée
usually include chicken cut into pieces, tomatoes or tomato sauce, mushrooms,
onions, garlic and various herbs and spices. Chicken pieces are browned in
a skillet, other ingredients are added, and the dish is simmered until the
chicken is cooked. Cacciatore sometimes includes wine and may be served with
pasta or rice.
