Bruschetta is an Italian garlic bread. The traditional preparation involves grilling or toasting bread slices, ideally from a rustic country loaf; rubbing the toasted slices with a cut clove of garlic; sprinkling liberally with coarse salt and pepper; and drizzling with extra-virgin olive oil. Bruschetta is often topped with tomatoes or other simple toppings, such as sautéed mushrooms, sautéed red bell peppers and puréed eggplant. In Italy, bruschetta is served as an appetizer or a light meal.
