Broth is a thin, clear liquid made from cooking meat, poultry or vegetables in water. It is often used interchangeably with bouillon. Broth rarely is served plain but rather is the basis for sauces, soups and stews. Canned chicken, beef and vegetable broths are an acceptable substitute for homemade. They tend to be salty so do not add salt to recipes using them until the cooking is complete.
