Broiling is the technique of cooking foods a measured distance from a direct source of heat. Both gas and electric ovens provide a means of broiling. Some rangetops have built-in grills that provide another broiling option. Grilling on a barbecue grill also fits this broad definition of broiling. The goal of broiling is to brown the exterior without overcooking the interior. Generally, the thinner the food item the closer it should be to the heat source.
