A brioche is a rich French yeast bread with a fine texture. It has a characteristic round shape with a fluted bottom and round top knot. Brioches can be small rolls or large loaves of bread. Eggs and butter contribute flavor, a golden color and a rich brown exterior. A special mold with a fluted, slightly flared side is needed for its unique shape. The dough can also be shaped in muffin pans or used to enclose a filling.
