Bouquet garni, a French term, is a small bundle of herbs tied together in cheesecloth that is used to flavor soups, stews, braised dishes and sauces. Fresh parsley, thyme and bay leaves are the traditional ingredients. However, any herbs or spices (fresh or dried) can be used, depending on the recipe. To make a classic bouquet garni, cut a single thickness of cheesecloth into a 6-inch square and lay it flat. Place 1 or 2 sprigs of parsley, 1 bay leaf and 1 or 2 stems of fresh thyme on the cheesecloth. Gather the edges and secure tightly with kitchen string. Add it to simmering foods for the duration of cooking, making sure to remove it before the dish is served.
