The blintze (sometimes spelled blintz) is of Eastern European origin. Today blintzes are a classic Jewish-American brunch dish. Similar to a crêpe but somewhat less delicate, the thin and tender pancakes are cooked on one side then filled and folded into a rectangular-shaped package and browned in a skillet or baked. The filling is usually made with cottage cheese or ricotta cheese, but they may also be filled with fruit, such as blueberries or cherries. They are often topped with sour cream.
