A traditional Italian cookie, biscotti (plural of biscotto) is baked twice. The dough is first formed into a log and baked. The log is then cut into slices and the slices are baked. This produces the characteristic crunchy texture that is ideal for dipping in coffee or a dessert wine. Biscotti can be flavored with anise seed, hazelnuts or almonds.
