Bamboo shoots, the young shoots of an edible species of bamboo, are plucked as soon as they poke through the ground. Prized as a vegetable in Asian cooking, they are crunchy, slightly sweet and mild tasting. Fresh bamboo shoots are rarely, if ever, available in the United States. Sliced bamboo shoots are available in cans; they should be drained and rinsed well before using.
